    Cilantro Lime Tuna Stuffed Avocados

    I find it easy to put together healthy dinners for my family, but I'm always stumped when it comes to snacks. A lot of times I make something resembling a charcuterie board or offer any leftovers we have in the fridge. I don't like to give my kids boxed snacks or frozen microwavable snacks, but at the same time I need something fast and easy.

    I love stuffed avocados because they have a good balance of healthy fats that keep everyone happy and satisfied (because otherwise it's chaos). These cilantro lime tuna stuffed avocados are zesty and customizable. You can easily use them to use up things in your pantry. For example, you can easily replace the corn or purple onions with black beans or tomatoes. Maybe you could add a little salsa to spice things up?!

    I recommend keeping the skins on the avocados so you can use them as little bowls. Also, try to make only as much as you want to eat because cut avocados typically don't store well. If you do have leftovers, store them covered, in the fridge, with lime juice (or lemon) squeezed on the edible part of the avocado to reduce browning.

    How to Easily Remove an Avocado Pit

    It can be tricky to get the pit out without cutting the avocado into quarters. For this recipe, you will want avocado halves, so quartering won't work.

    To remove the pit, place two fingers on each side of the pit. Using your thumb, push on the back of the avocado behind the pit. It should pop out easily. This way you can keep your avocado half in tact.

    Ingredient Options

    6 medium avocados

    3 cans tuna (wild caught if possible)

    2 cups mayonnaise (or sour cream)

    ½ tsp cumin

    ½ tsp chili powder

    ½ tsp garlic powder

    salt to taste

    ½ cup cilantro finely chopped

    ⅛ cup lime juice

    Add-in Options

    1 cup red onion diced

    1 cup black beans

    1 cup tomato diced

    1 cup corn

    How to Make Cilantro Lime Tuna Stuffed Avocados

    Take each of the avocados, slice them in half, and remove the pits. Set aside.

    In a small mixing bowl, combine the tuna, mayo, salt, and spices.

    Mix in add-ins of your choice.

    Spoon the tuna mixture into the avocado halves.

    Sprinkle cilantro and squeeze lime juice on top of the avocados. You can also top your stuffed avocados with salsa verde for a little extra flavor!
