Creamy mashed cauliflower is the perfect wholesome, low carb side dish. Sometimes you don't have any potatoes, sometimes you are trying to avoid starchy vegetables, and other times you are just craving comfort food. This recipe also may be a good idea if you are hosting a holiday meal and have guests on a keto or low carb diet. Whatever the reason, this dish will satisfy those taste buds.
When you first think of mashed cauliflower, you may think of this dish being second rate to mashed potatoes. Honestly, this dish stands on its own and is just as creamy and buttery. The texture is lighter than mashed potatoes, but there are also ways to thicken it and make it similar. The flavor of the cauliflower is very light and won't overpower the rest of your meal.
You can either make this with an immersion blender or a regular blender. I prefer to blend it in the regular blender for a creamier texture and less mess. This recipe only uses a few ingredients and is easy to whip up.
Ingredients
1 medium head of cauliflower cut into florets
3 cloves garlic
½ cup cream (or coconut cream)
2 tbsp butter
½ tsp rosemary
½ tsp thyme
How to Make Creamy Mashed Cauliflower
Put a pot of water on the stove and bring to a boil.
Add the cauliflower florets and boil until tender. You should be able to easily pierce the cauliflower with a fork.
Add all of the ingredients to the blender and blend until creamy. You can add more cream until you get the desired texture.
Serve warm with butter.
