    Cucumber Salmon Bites

    These cucumber salmon bites made with smoked salmon are easy and perfect for a warm summer afternoon.

    Snacks are honestly something I struggle with because I have trouble coming up with ideas. I'm also feeding picky eaters and I try to stay on a whole food, home cooked diet. A test for my creative brain. Hence, cucumber bites.

    Cucumbers and pickles are one of the vegetables that are green AND delicious in my kids eyes. However, you can swap out the cucumbers for crackers if you too have a picky eater. My oldest child won't eat the cucumber skin and my youngest always picks at any kind of salmon dish, so sometimes I have to modify the recipe too.

    These make great appetizers for something like a summertime BBQ or perhaps a picnic. They are also nice enough for parties or events.

    Creating Nourishing Snacks

    One thing that is really important for kids is healthy fat. It is super important for brain development. I know low fat diets, low fat milk, and low fat snacks have been trending for decades, but low fat is not the healthiest for most people and especially kids. When snacks and meals have enough healthy fat, it gives you energy and helps you feel less hungry.

    So when I am creating snacks for my kids, I look for the healthy fats as well as protein and carbohydrates. I mostly stick to whole foods as well and no added sugars (so no prepackaged snacks). Balance is key.

    Some ways to get healthy fats into snacks are to add full fat dairy products, crispy nut butter, butter, and avocados. For protein we will add in meats (either leftover meat from dinner or deli meat), pâté, hard boiled eggs, cheese, and crispy nuts. For carbohydrates, I will make sourdough crackers ahead of time or pull out fresh fruit. I also like to add in probiotic rich foods as well like kefir, yogurt, sauerkraut, and lacto-fermented pickles.

    All of these snack items can be made ahead of time or are ready to pull out on the spot. Sometimes I will put slightly more effort in and make something a little fancier like these cucumber salmon bites.

    How to Make Cucumber Salmon Bites:

    Ingredients:

    2 firm cucumbers (I prefer english cucumbers for this recipe)

    6 oz (one package or so) cream cheese

    1 package of smoked salmon

    1 tablespoon of dried dill weed

    The only tools you will need are a knife and cutting board. A platter is also nice for presentation.

    Steps:

    Slice your cucumber into slices. You want to ensure that the cucumber will hold its shape, so don't slice it too thin. I prefer to cut a thick slice.

    Lay out your cucumber slices onto a platter. Even rows looks nice if you are making this for a party.

    Spread about a teaspoon of cream cheese on top and top with a fingertip sized piece of smoked salmon.

    Sprinkle a little dill on top of the platter and that is it! Simple, easy, and a decorative appetizer.

    Ingredients

    • 2 medium cucumbers
    • 6 oz cream cheese
    • 4 oz smoked salmon sliced scottish-style
    • 1 tablespoon dried dill weed

    Instructions

    • Slice the cucumber into thick slices
    • Lay out the cucumber slices flat on a platter and top with a small dollop of cream cheese
    • Then place a small square of salmon on top of the cream cheese (about a fingertip size)
    • Sprinkle a pinch of dill on top
    • Once you fill up a whole platter, you are ready to entertain your guests!
