Jump to RecipeI've finally had the chance to try out my cast iron muffin pan! My mom found this antique muffin pan at an antique store and has used it for years as home decor, but thought that maybe I would get more use out of it. Now I want to make these healthy peach muffins all the time!
The primary ingredient in these muffins is almond flour and whole food ingredients. A lot of gluten-free or grain-free recipes call for ingredients like xanthan gum and tapioca starch. With GAPS, you have to avoid some of these ingredients because they negatively impact the digestive system.
These muffins are very light and fluffy and have a lightly sweet, peach flavor. These are a healthy snack as they contain whole food ingredients and no refined sweeteners. You can even leave out the honey and it will still be sweet.

Healthy Peach Muffins (GAPS/Gluten Free)
Equipment
- muffin pan
- muffin liners (optional)
Ingredients
- 1 cup diced peaches (very small pieces)
- 1 cup blended peach puree (blend one cup of peaches in blender until smooth)
- 2 cups almond flour
- 4 eggs
- ¼ cup coconut oil (room temperature)
- 1 teaspoon sea salt
- 2 tablespoon honey (optional)
Instructions
- Preheat the oven to 300 °F.
- Grease or put liners into the muffin pan. Set aside.
- In a large bowl or stand mixer, mix together all of the ingredients except for the diced peaches. Mix until batter is smooth.
- Fold the diced peaches into the batter.
- Spoon the batter evenly into each liner or cup and fill to the top of the cup.
- Bake the muffins for an hour and 15 minutes or until a toothpick comes out clean.
- Allow to cool on a drying rack before enjoying.
