I've finally had the chance to try out my cast iron muffin pan! My mom found this antique muffin pan at an antique store and has used it for years as home decor, but thought that maybe I would get more use out of it. Now I want to make these healthy peach muffins all the time!

The primary ingredient in these muffins is almond flour and whole food ingredients. A lot of gluten-free or grain-free recipes call for ingredients like xanthan gum and tapioca starch. With GAPS, you have to avoid some of these ingredients because they negatively impact the digestive system.

These muffins are very light and fluffy and have a lightly sweet, peach flavor. These are a healthy snack as they contain whole food ingredients and no refined sweeteners. You can even leave out the honey and it will still be sweet.
