    Instant Pot Rotisserie Chicken

    Learning how to make a whole chicken in the instant pot is something every instant pot user should know. Not only that, but how to make a juicy and flavorful rotisserie chicken really takes it to the next level. I did some research, looking at different recipes and experimenting at home to discover what makes the best instant pot rotisserie chicken.

    This instant pot rotisserie chicken recipe takes less than an hour to make and is mostly hands off. You can use either a frozen chicken or fresh chicken for this recipe (I will have cook times down below). Also, you can finish this recipe off with either your oven or an air fryer lid (it is convenient since you don't have to transfer your chicken to another pan).

    As delicious as a store bought rotisserie chicken is, it is not the most healthy. They are often injected with a solution full of processed ingredients. But if you make it at home, especially if you know where your chicken came from, you don't have to worry about what is in it. Not to mention, it is really easy in the instant pot!

    Instant Pot Rotisserie Chicken

    How to cook a whole, juicy chicken in the instant pot.

    Equipment

    • Instant Pot
    • Trivet for instant pot
    • Turkey baster with injector attachment (optional)
    • Air fryer lid for instant pot (optional)
    • small bowl
    • basting brush (optional)

    Ingredients

    • 1 whole chicken
    • 1 cup water
    • 1 onion
    • 1 head of garlic
    • 1 lemon (you can substitute lemon juice for this)
    • salt and pepper to taste
    • 1 teaspoon paprika
    • 1 teaspoon thyme
    • 1 teaspoon sage
    • 1 teaspoon marjoram
    • 1 teaspoon rosemary
    • 2 tablespoon melted butter or ghee
    • potatoes and/or carrots (optional)

    For the gravy:

    • 2-3 tablespoon arrowroot starch
    • 1-2 tablespoon gelatin (optional)

    Instructions

    • Put one cup of water in the bottom of the instant pot.
    • Next, place your trivet in the instant pot and place your chicken on the trivet.
    • Insert the onion, garlic, and lemon into the cavity of the chicken. If the pieces are too large for your chicken, cut them into smaller pieces and insert them.
    • In a separate dish, mix together the salt, pepper, paprika, thyme, sage, marjoram, and rosemary. This will be the rub.
    • (Optional) If you want extra flavor, you can use a turkey baster with a injector attachment and mix together extra rub seasonings and lemon juice. Inject this mixture into the chicken meat.
    • Cover the chicken in the melted butter or ghee and then the rub. Make sure to get under wings and around the legs.
    • Add in potatoes or baby carrots to the instant pot if desired.
    • Cook your chicken at high pressure at 6 minutes per pound for a fresh chicken (see notes below if you have a frozen chicken). Natural release for 15-20 minutes.
    • After your chicken is cooked, you have two options. 1. You can broil your chicken in the oven or 2. using your air fryer lid, broil your chicken in the instant pot until it is golden brown.
    • To make the gravy, remove the trivet, chicken, potatoes, and carrots. Turn the instant pot on Sauté and slowly add in arrowroot starch until the gravy thickens. You can also use 1-2 tablespoons of gelatin as well.
    • Slice the chicken and serve with potatoes, carrots and gravy on top. Enjoy!

    Notes

    The cook time for a fresh chicken is 6 minutes per pound.
     
    Cook times for a frozen chicken:
    6 QT Instant Pot:
    4 lbs: 60 minutes
    5 lbs: 70 minutes
     
    8 QT Instant Pot:
    4 lbs: 40 minutes
    5 lbs: 50 minutes
    6 lbs: 60 minutes
