Jump to RecipePeach season was just at its peak a couple of weeks ago, but maybe you have a few peaches still hanging around. This recipe is perfect for those leftover peaches and is pectin free, refined sugar free, small batch, and doesn't require any canning.
I personally don't have much canning experience, so I make small batches of jams and preserves and make sure to finish the jar within in a couple of weeks. Its easy and simple, and you still get that flavorful, homemade taste.
Mint adds a fresh, cooling flavor to peach preserves. You can easily infuse the flavor by wrapping the mint in cheesecloth and tying up the end to make a bouquet garni.

Pectin Free Peach Mint Preserves
Equipment
- 1 pint sized jar
- Saucepan (thicker bottom is best) and spoon
- Cheesecloth
- Twine
- Optional: immersion blender or blender
Ingredients
- 2 lbs peaches sliced (can leave skin on if desired)
- 2 tablespoon lemon juice
- ¼ cup honey
- small sprig mint
Instructions
- Take the mint and wrap up in the cheesecloth. Tie the end so the mint doesn't escape.
- Place the peaches, mint, honey, and lemon juice in the saucepan and bring to a boil while stirring.
- Once the pot is boiling, reduce the heat to a simmer.
- Simmer for 2 hours, stirring regularly, until the peaches reach a thicker, jam-like consistency. Make sure they don't burn on the bottom.
- Once they are done, remove from heat, remove the mint, and pour into a pint sized mason jar (Optional: you can use an immersion blender or blender to get a jam consistency).
- The preserves will last in the fridge for 2-3 weeks.
