    Roasted Balsamic Broccoli

    Roasted balsamic broccoli is a tasty way to get your veggies in. The acidity of balsamic vinegar pairs well with roasted veggies, and can help picky eaters give broccoli a try. This is a simple side dish that can be a regular part of your weeknight dinner rotation.

    I will be honest, I don't think most kids are programmed to like veggies. This is why it is important to make the veggies extra tasty with cheese, seasonings, and sauces that really make the flavor pop. Slowly, over the past few years my kids have become more willing to eat veggies due in part to this strategy. This is one recipe that my kids really do like.

    RECIPE UPDATE: I have recently updated this recipe to include a separate balsamic glaze instead of roasting the broccoli with the balsamic vinegar. This makes the broccoli more juicy and gives the balsamic vinegar a little punch. In the previous version of this recipe, the balsamic vinegar was more subtle.

    Ingredients

    2 heads broccoli chopped into florets

    2 cloves garlic minced

    ¼ cup avocado oil

    1 cup balsamic vinegar

    salt and pepper to taste

    How to Make Roasted Balsamic Broccoli

    Preheat the oven to 400°F.

    On a greased baking sheet, spread the broccoli florets evenly across the baking sheet. Season with salt and pepper if desired.

    Sprinkle the minced garlic on top of the broccoli, and drizzle with avocado oil.

    Roast the broccoli in the oven for 20-25 minutes or until slightly browned.

    Meanwhile, simmer the balsamic vinegar in a small saucepan on the stovetop until it has been reduced to ⅓ of a cup.

    Remove the broccoli from the oven and drizzle the balsamic glaze on top.
