Learn how to make homemade southern sourdough peach cobbler using only sourdough discard. Sourdough discard recipes are recipes that just use sourdough starter (no rising involved). Once you have an active starter going, this recipe is very easy to make. No waiting for biscuits to rise; you just pour and go.

I honestly prefer to make most of my sourdough recipes using discard. I will often find a way to make a typical, more complicated sourdough recipe, a discard recipe. So if you like sourdough discard recipes, this is for you!

I love making this recipe year round and I will use frozen peaches when it isn't peach season. I love those golden, juicy peaches with a sourdough topping and a side of ice cream. It completely says summer to me. It is also easy enough that I can bake this with my kids.

    Ingredients

    ½ cup unsalted butter

    2 cups fed sourdough starter

    1 cup honey, divided

    1 tbsp baking powder

    1 pinch salt

4 cups peach slices fresh is best but frozen is fine

    1 tbsp lemon juice

How to Make Southern Sourdough Peach Cobbler

    Melt butter in a 9 x 13 baking dish.

Meanwhile, bring a half cup of honey, lemon juice, and peach slices to a boil, stirring constantly. Set aside.

Mix together the sourdough starter, other half cup of honey, baking powder and salt and pour this mixture over the melted butter.

Pour the peach slices on top of the batter and bake at 350° for 40 minutes or until golden brown.

Once the cobbler is baked, let it sit for 10 minutes before serving.

Serve with vanilla ice cream or freshly whipped cream.

So easy and very delicious! I love that the batter is fermented but the wait is not needed. Baking with discard is a relief! Thanks for a fabulous recipe.

I’m confused. The recipe calls for fed starter, but in the description she says, “..if you like sourdough discard recipes, this is for you!” So, does the recipe call for 2 cups of fed starter (seems like a lot) or 2 cups of discard?

Made this tonight. Had to make a half recipe because I didn’t have 2 cups of discard and hubby was craving peach cobbler. I did add a sprinkle of nutmeg and cinnamon to the peaches. It was delicious and turned out perfectly! Big hit with the whole family, and I was happy it didn’t need added flour or sugar. Thank you!
