  • 2 cups freshly milled soft white wheat flour
  • 1 teaspoon baking soda
  • 1 ½ teaspoon baking powder
  • ½ teaspoon sea salt
  • 2 large eggs
  • ½ cup honey or maple syrup
  • ½ cup melted butter coconut oil, or avocado oil
  • ¾ cup milk or buttermilk
  • 1 teaspoon vanilla extract

Optional Add-Ins:

  • Mashed banana zucchini, blueberries, cinnamon, or chopped nuts

Instructions

  • Preheat oven to 350°F (175°C). Grease or line a loaf pan.
  • In a large bowl, whisk together flour, baking soda, baking powder, and salt.
  • In another bowl, beat eggs, honey, melted fat, milk, and vanilla.
  • Gently stir wet ingredients into dry until just combined. Do not overmix.
  • Let batter rest for 10 minutes to allow fresh milled flour to fully hydrate.
  • Pour batter into prepared pan and smooth the top.
  • Bake 45–55 minutes, until a toothpick inserted in the center comes out clean.
  • Cool in pan for 10 minutes, then transfer to a rack to cool completely before slicing.

Notes

Soft white wheat gives the most tender crumb.
Resting the batter is key for whole grain softness.
This bread freezes well when sliced and wrapped.
Natural sweeteners like honey, maple syrup, or ripe bananas work beautifully.
