Sprouted Oat Granola Bars

Equipment

  • 1 9x13 baking dish line with silicone baking mat
  • 1 mixing bowl

Ingredients

  • 1 cup sprouted oats (can substitute with rolled oats but not instant oats)
  • 10 medjool dates pitted
  • 1 cup nut butter (almond, peanut, cashew, etc.)
  • ½ cup seeds (sunflower, pumpkin, etc.)
  • 1 cup dried fruit (raisins, dried apricots, etc.)
  • 1 cup chopped and/or whole nuts (almond, cashew, walnut, etc.)
  • ¼ cup honey (can substitute with maple syrup)

Instructions

  • Preheat the oven to 350°F.
  • In the food processor, blend the dates first adding a little filtered water as needed.
  • Optional: chop the nuts in the food processor as well if they are not already chopped.
  • In a medium-sized mixing bowl, mix together all of the granola bar ingredients.
  • Spread the mixture eventually across a baking dish lined with a silicone baking mat. Don't spread the bars too thin or the granola bars will fall apart more easily.
  • Place the baking dish in the oven and bake for about 30 minutes. You want the bars to be slightly golden but not a dark brown.
  • Remove the bars from the oven and allow to cool for 10 minutes before cutting them into rectangles. They may be slightly crumbly, so make sure to cut them into smaller bars. Enjoy!
