Fresh veggies and ground pork sautéed in a spicy fermented chili sauce. This makes an easy weeknight meal and perfect for meal prepping!
Whenever I am stuck on what to make for dinner, I often will do stir fry types of meals or soups. It's really easy to throw meat, especially ground or cut meat, into the pan with veggies and sauce and have dinner ready in a half hour. When you have kids, sauce is key.
I've noticed often that with sautéed ground meats you really need some type of sauce to liven up the dish. Otherwise, you get a really dry meat that no one will eat. For this recipe, I use a fermented chili paste that is absolutely amazing for spicy Asian recipes.
This is also a great healthy take on egg rolls since fried foods can be harder to digest. I'll admit that egg rolls are honestly one of my favorite things about Chinese take out. I could honestly just have a meal of egg rolls with a side of low mein. However, that's not something I can eat regularly. You still get all the flavor of the egg roll without the fried shell.

Meal Prep Tips
This is an easy weeknight recipe to meal prep ahead of time. One thing I do to make cutting the veggies in this recipe easier is to shred them in the food processor. If your food processor has a slicing blade, you can easily shred the cabbage and carrot in about 5 minutes.
The carrot should fit right into the shoot and be simple to shred. For the cabbage, remove the core and then chop the the cabbage into large chunks. Then feed into the food processor and dump into the pan. You can shred the veggies ahead of time to save time during the week.

What You Will Need
1 lb ground pork (can substitute with ground turkey)
1 tbsp fresh ginger minced
2-3 tbsp chili paste (I use a fermented chili paste)
⅓ cup coconut aminos
⅛ cup rice vinegar
1 medium carrot shredded
½ head cabbage shredded
2 green onion chopped
2-3 tbsp sesame seeds

How to Make Spicy Egg Roll in a Bowl
In a skillet on medium heat, sauté the ground meat until browned.
Add in the chili paste, coconut aminos, and rice vinegar and mix to flavor the meat.
Stir in the cabbage and carrot and cook until softened.

Serve into bowls and top with green onion and sesame seeds. Enjoy!
